  1. It is true that bananas are very healthy with or without spots. The spots are a sign of the banana ripening. I often use the bananas after they are over ripe, darker skin and very soft inside, to bake with. Banana Bread is a favorite recipe of mine. Their flavor is stronger and holds up to the higher temperatures. If you cannot use the bananas when they are ripened and may go bad first, freeze them in the skin. If the peel is still thick and has some yellow, just let them freeze in the skin. When you are ready to bake with them, let them thaw for approximately 20 mins. before peeling them.
